ABOUT

Zach Dragani founded Screwed Up Eyes Coffee in 2021. His deep-dive into the world of coffee began in 2019 when he started as a barista at the Pawling Bread Company in Pawling, NY.  He soon became head barista and managed the coffee program for the next three years which further accelerated his passion.

After buying a few books on coffee’s origins, Zach was hooked and wanted to learn as much as possible. He linked up with Coffee Project NY, where owners Chi Sum and Kaleena have the state’s only Specialty Coffee Association Training Campus and provide a slew of unique classes and resources. In August 2021, Zach enrolled in coffee roasting, sensory analysis & evaluation, and eventually Q grading in 2022. Q Arabica grading is the industry standard for evaluating and scoring coffee. Zach completed the Q grading course after passing 19 exams and evaluating over 250 cups of coffee. He is now a Certified Q Arabica Grader.

Zach now develops Screwed Up Eyes Coffee’s proprietary blends on his Ikawa sample roaster and does production roasts on a Diedrich IR12.

Kudos to Nicole Polidore for spending countless hours designing the art, website, and more.
